Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup sugar

1 tablespoon lemon juice
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch
1/4 cup water

3 packages (8 oz each) cream cheese, softened
1 cup sour cream
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
For the Crumble Topping:
1/2 cup all-purpose flour
1/4 cup old-fashioned oats
1/4 cup brown sugar, packed
1/4 teaspoon ground cinnamon
1/4 cup unsalted butter, cold and cubed
Instructions:
Step 1: Prepare the Crust
Preheat the oven to 325°F (163°C).
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the crumbs are evenly coated.
Press the mixture into the bottom of a 9-inch springform pan, creating an even layer.
Bake the crust for 8-10 minutes until golden. Remove from the oven and set aside to cool.
Step 2: Prepare the Apple Filling
In a medium saucepan, combine the sliced apples, lemon juice, sugar, cinnamon, nutmeg, cornstarch, and water.

After baking, turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
Step 7: Chill the Cheesecake
After cooling to room temperature, refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to set properly.
Step 8: Serve
Before serving, run a knife around the edges of the springform pan to loosen the cheesecake.
Remove the springform pan, slice, and enjoy!
