Not only are they delicious, but they're also made with wholesome ingredients that can be tailored to your taste. Whether you prefer bacon, sausage, or just a veggie-packed version, these egg bites will keep you fueled for the day ahead.

Ingredients:

  • 6 large eggs

  • 1/2 cup milk

  • 1/2 cup shredded cheese

  • 1/2 cup cooked and crumbled halal turkey bacon or halal sausage

  • 1/4 cup diced bell peppers

  • 1/4 cup diced onions

  • 1/4 cup spinach

  • 1/2 tsp garlic powder

  • Salt and pepper (to taste)

  • 1 tbsp olive oil or non-stick spray (for greasing)

Instructions:

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or lightly brush with olive oil to prevent sticking.

Step 2: Prepare the Ingredients
Dice the bell peppers and onions (if using), and chop the spinach. If you're using cooked bacon or sausage, crumble it into small pieces. Shred your cheese if it's not pre-shredded.

Step 3: Whisk the Eggs
In a medium-sized bowl, crack the eggs and add the milk. Whisk together until fully combined and the mixture is smooth.

Step 4: Add Flavorings
Stir in the salt, pepper, garlic powder (if using), and any other seasonings or herbs you like.

Step 5: Combine the Mix-ins
Add the shredded cheese, cooked bacon or sausage, diced peppers, onions, and spinach (or other vegetables) to the egg mixture. Stir until all the ingredients are evenly distributed.

Step 6: Fill the Muffin Tin
Pour the egg mixture evenly into the muffin cups of your prepared tin. Fill each cup about 3/4 of the way to allow space for the egg bites to rise.

Step 7: Bake
Place the muffin tin in the preheated oven and bake for about 18-22 minutes, or until the egg bites are set in the center and lightly golden on top. You can check by inserting a toothpick—if it comes out clean, they’re done.

Step 8: Cool and Serve
Let the egg bites cool in the muffin tin for a few minutes before removing them. Use a butter knife to gently loosen the edges if needed. Serve immediately, or allow them to cool completely for meal prep.

Tips for Variations:

  • Add more veggies: Try adding mushrooms, zucchini, or tomatoes for extra flavor.

  • Cheese options: Use a mix of cheeses like feta, swiss, or pepper jack for different flavor profiles.

  • Make them dairy-free: Use a dairy-free milk (like almond or oat milk) and skip the cheese, or use a dairy-free cheese.

  • Make ahead: Egg bites can be stored in the refrigerator for up to 4 days. You can also freeze them in an airtight container for up to a month. Reheat in the microwave for about 30-45 seconds.

These egg bites are a flexible, nutritious breakfast option that you can customize based on your preferences. Enjoy!
