Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers (any color), halved and seeded

  • 1 lb ground chicken

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 cup cooked rice (white or brown)

  • 1 can (14 oz) diced tomatoes, drained slightly

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • ½ tsp dried oregano

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)

  • 1 tbsp olive oil


Instructions:

Step 1: Preheat and prep the peppers
Preheat your oven to 375°F (190°C). Lightly oil a baking dish.
Slice the bell peppers in half lengthwise, remove seeds and membranes, and place them cut-side up in the dish.

Step 2: Cook the filling
In a large skillet, heat olive oil over medium heat. Add diced onion and garlic and sauté until softened.
Add ground chicken and cook until browned and fully cooked through.
Stir in the diced tomatoes, cooked rice, and spices. Let the mixture simmer for 5 minutes so the flavors can blend.

Step 3: Stuff the peppers
Spoon the chicken and rice filling evenly into each bell pepper half. Press gently to pack them well.
Sprinkle the tops with shredded cheese.

Step 4: Bake
Cover the baking dish with foil and bake for 25 minutes.
Remove foil and bake for an additional 10–15 minutes, until cheese is melted and bubbly.

Step 5: Cool and serve
Let the stuffed peppers cool slightly before serving. Garnish with fresh parsley or a dollop of sour cream if desired.
